3 Healthy Breakfast Ideas that Aren't Boring
When people think of healthy, they don't exactly think of something delicious. Well, for the most part, they're right. The ingredients used for healthy meals can be quite bland and boring, but it's all about how you cook them and make them your own. Creativity is a must when it comes to healthy eating. It'll be the difference of you eating a plain rice cake and you eating one that's smothered in yummy almond butter and topped with juicy strawberries. And one of the things that I've been the most creative about when it comes to my meals is breakfast. I love breakfast! I'm one of those people that if I don't get breakfast in the morning, I turn into a complete grouch. So breakfast is 100% mandatory.
But I found myself with a dilemma. After doing a complete overhaul of my diet, I was terrified at the thought of my breakfast turning into boring oatmeal and fancy smoothies. And people, one can not live on smoothies alone. So I was determined to find ways to create my breakfast favorites that would also keep me on track. And you don't have to call me Wolfgang Puck or anything but I've come up with some pretty yummy and healthy breakfast recipes. Us health nuts need not struggle anymore.
These are basically all of your normal breakfast favorites but with a super healthy twist. But trust me, they taste so delicious that you might never want to go back to the original.
2 Whole Eggs
2 Pieces of Protein or Gluten Free Bread
1 Tablespoon of Cinnamon
2 Tablespoon Vanilla Powder or Extract
1 Cup of Almond Milk
Combine the eggs, cinnamon, almond milk and vanilla in a bowl and stir. Once the mixture has been stirred, dunk the two slices of bread into it. Then places the slices on a skillet or frying pan. Let cook for 4 minutes on each side. I love turkey bacon, so I like having it on the side with my french toast and having some banana on top.
1/3 Cup of Egg Whites
1 Cup of Old Fashioned Oats
2 Tablespoons of Cinnamon
1 Tablespoon of Vanilla
Combine all of the ingredients in a blender and blend until you get a batter consistency. It shouldn't be too liquidy nor too tough. Once you have the right consistency, just like you would do with regular pancakes, pour the batter onto a frying pan or griddle. You can make them as big or small as you want! Have fun with them. Also like normal pancakes you're gonna flip them over when one side gets to a light/ medium brown. I always love adding fruit to mine, my favorite is strawberries or blueberries.
EGG WHITE CUPS
2 Cups of Egg Whites
1/2 Cup of Chopped Kale
1/3 Cup of Chopped Onion
4 Slices of Turkey Bacon
Combine the egg whites and vegetables in a bowl and stir the mixture. Get a muffin or cupcake pan and spray it with coconut oil or any non-stick baking spray you have. Align the turkey bacon within each cup within the pan. Then pour the egg white mixture in, make sure you have enough for each cup. Place in oven at 350 for 15-20 minutes. I top mine with goats cheese, you can top it with any kind of cheese or condiment you like.
This post is making me super hungry for breakfast. Also, instead of using syrup for the pancakes and french toast, I opt for pure maple syrup or pure honey. It tastes just as good as syrup but is much healthier. These recipes are definitely great for a yummy Saturday breakfast or Sunday brunch, or for a mid-week pick me up like I sometimes do.
